Green Salad with Stewed Mushrooms, Mozarella and Sauce

GREEN  SALAD  WITH  STEWED
MUSHROOMS,  MOZARELLA  AND  SAUCE

Ingredients:

1 green curly salad

1 bunch of arugule

6 champignons

6 cherry tomatoes

2 tbsp. Balsamic vinegar with honey

3 whole grain breadcrumbs

2 tbsp. mozzarella grated

2 tbsp. olive oil

1 tbsp. Lurpak butter

1 sprig of fresh thyme

Salt, pepper

       For sauce:

¼ cup olive oil

2 tbsp. Balsamic vinegar with honey

Salt, pepper

Directions:

1. Cut mushrooms  into slices, season with salt

and fry in a saucepan with olive oil and butter Lurpak.

As soon as the oil will heat up, add thyme, and then

when mushrooms begin to be fried add balsamic vinegar

with honey and stew them for a few more minutes until ready.

2. Remove the pan from the fire and allow the mushrooms to cool.

3. Prepare the sauce: Pour olive oil and balsamic vinegar with honey

in a deep bowl.  Add thyme, salt, pepper and whisk all together

to a homogeneous mass.

4. Put  big pieces of green curly salad and arugula leaves,

cherry tomatoes cut in the middle,

breadcrumbs crushed to small pieces, mushrooms and grated

mozzarella in a salad bowl.

5. Pour the sauce.
