Burger with Caramelized Pancetta and Cabbage

BURGER WITH CARAMELIZED PANCETTA AND CABBAGE

Ingredients:

500gr pork pancetta without bone

1 onion cut slices

1 clove garlic

2 tablespoons mustard

1 tablespoon honey

1 liqueur-glass of whisky

3 tablespoons balsamic vinegar

4 tablespoons olive oil

Salt, pepper

8 rounds buns

3 cups cabbage-carrot salad

1 cup grated Cheddar

4 tablespoons sause bbq

Directions:

Season  meat with salt and pepper, coat with mustard. Preheat olive oil in a non-stick frying pan. Put meat on the pan and saute until change color. Add onion and saute until it becomes transparent.  Then add honey and garlic, mix with meat well and pour whisky. When whisky evaporate add balsamic vinegar, cover the pan with a lid and cook over low heat for about 40 minutes until tender. Then put  meat  with onion and liquid out in a bowl. Heat up  lightly all buns on the same frying pan. Fill  buns with plenty of meat, cheese, cabbage-carrot salad, add sauce bbq.
