Melomakarona —  Christmas Sweets



2 cups olive oil or sunflower oil

1/2 cup water

4 cups flour

4 tablespoons fine semolina

1 cup of white sugar

2 tablespoons baking powder

Zest of 2 oranges

Juice of 2 large oranges

4 tablespoons cinnamon

1 tablespoon Carnation

3 tablespoons nutmeg

1 cup walnuts grated

1 shot glass cognac


2 cups of water
2 cups sugar
1 cup glucose
2 tablespoons honey
1 cinnamon stick
1/2 orange


Boil glucose with 1/2 cup water until dissolved.  Add  sugar, remaining water, cinnamon, orange and let it boil for 8 minutes.Then remove the syrup from the heat  and once it’s warm — add honey.

Whisk the olive oil in a bowl for 10 minutes. Add sugar, orange juice, zest, 1/2 cup water, cognac,  spices, stirring continuously. Mix the sifted flour, semolina, baking powder in another bowl. Make a recess in the middle  and pour in the mixture from the first bowl. Interfere with both hands from outside to inside until homogeneous. Then add the walnuts and stir gently.

Form small balls, place them on a baking sheet on a  parchment paper and bake at 185ºC  for 25-30 minutes.
Once removed from the oven immediately dip hot cookies in cold syrup immediately  for a few seconds.
Then let syrup to drain for 15 minutes, put the cookies on a plate, pour honey and sprinkle with walnuts, sesame and cinnamon powder.
