Potato Balls Stuffed with Parmesan



1 kg potatoes

1 cup milk

1 tablespoon butter

1 bunch chives finely chopped

1 pinch of nutmeg

150g parmesan cut into small pieces

Salt, pepper

2 eggs, beaten

2 cups bread crumbs

Vegetable oil for frying


Wash well and peel the potatoes, cook in plenty of salted water. Once the potatoes are cooked drain the water and mash it. Put the pot with mashed potatoes on low heat. Add butter, milk, chives, salt, pepper. Mix well all together until smooth, let it cool and put in the fridge for about one hour until thickened. Then form the potato balls with a piece of Parmesan cheese inside. Dip the potato balls in beaten eggs, coat in bread crumbs and fry in hot oil in a deep frying pan until golden brown. Then put on absorbent paper to drain. Serve hot or cold. Sprinkle with chives finely chopped.
