Rice-Lentil Soup



1/3 cup olive oil

1 onion finely chopped

2 red bell pepper finely chopped

2 garlic cloves cut into slices

1 cup lentils

1 tablespoon tomato paste

1 cup Caroline rice

2 cups vegetable broth

400gr tomatoes finely chopped

1 bay leaf

4-5 sprigs of parsley finely chopped

4-5 sprigs of dill finely chopped

Salt, pepper


Pour olive oil in a large pot and saute onion and pepper until soft. Add garlic and saute for 1 minute more. Then add lentils and mix well until oily. Add tomato paste, mash it at the bottom of the pot. Add vegetable broth and a bay leaf. Cover the pot  with a lid and cook the soup for 15 minutes.

Then add  the rice, tomatoes, stir well and continue to cook for 20 minutes more. At the end add parsley, dill, salt and pepper.
