Salted Cod with Crust Bread



1 kg salt cod cut into pieces

1 sprig rosemary

1 tablespoon butter

Zest of one lemon

1/2 cup Olive oil

1 tablespoon mustard

1 tablespoon mayonnaise

1 clove of garlic

6 slices of stale bread without the crust

2-3 sprigs of thyme

Salt, pepper


Put pieces of salted fish in a bowl with plenty of water for 12 hours. Change the water constantly and wash well the fish each time. At the end, wash the fish, drain and season with salt and pepper.

Heat the butter and 2 tablespoons of olive oil in a nonstick skillet. Add the lemon zest, rosemary and leave for a little bit until exude fragrance. Then, remove the rosemary and fry the fish pieces lightly until golden on both sides. Place the fried fish on the Pyrex.

Mix the mayonnaise with mustard and pour the sauce over the fish. Crush slices of bread, garlic and thyme in a multi,  and sprinkle this mixture on top of the fish. Pour the remaining olive oil on top. Preheat the oven to 200ºC and bake the fish for 30 minutes in the air until the golden brown crust.
