Santorinian beans

SANTORINIAN BEANS

Ingredients:

500gr. beans

1 onion

1/2 cup olive oil

Salt, oregano

Juice of one lemon

Finely chopped onion

Directions:

Wash the fava lentils well and set to boil in a large cooking pot (medium heat) adding enough water. Add one peeled onion. Half way though cooking add 3 tablespoons of olive oil. Salt to taste. Cook fava until the beans are completely softened and turn into a puree. Add olive oil, lemon juice and mix well. Serve with chopped onion and oregano on top. It can be served warm or cold.
