Spinach with Rice — Spanakorizo

SPINACH WITH RICE — SPANAKORIZO

Ingredients:

1kg of spinach

1/2 cup of rice

4-5 bulblets, finely chopped

1 bunch dill, finely chopped

3/4 cup olive oil

Juice of 1-2 lemons

Salt, pepper

Directions:

Clean, wash and parboil spinach. Then wring it well and chop. Heat olive oil in a saucepan, add onion and fry it until golden brown. Add spinach, salt, pepper. Simmer for about 10-15 minutes. Then add 1,5 — 2 cups of water and bring to a boil. Add rice and dill. Simmer for about 15 — 20 minutes. Serve with lemon juice.
