Squid with Rice



1/2 kg squid cut into slices

1 cup milk

4 tablespoons olive oil

1 onion finely chopped

1/2 cup wine

2 tablespoons tomato paste

2 cups Carolina rice

4 cups vegetable or seafood broth

1/2 brunch parsley finely chopped

Freshly ground pepper


Wash well the squid, remove the bones and hard part of the tentacles. Place the squid in a bowl. Then pour milk in the bowl.  The squid must be completely covered with milk. Leave the squid to soak in milk for at least 1 hour. Then drain well the squid from milk, rinse well and cut into slices. Heat the olive oil in non-stick pan and saute the squid for 3 minutes over high heat. Add onion and continue saute until the onion becomes transparent. Then add rice and mix well until oily.

Add tomato paste and rub it well with a wood spoon until the tomato paste begins to exude the aroma. Pour wine and wait until the alcohol  evaporates. Then pour vegetable or seafood broth. Lower the heat and leave it to cook slowly for 25 minutes until the liquid is absorbed. Sprinkle with parsley and pepper and serve.
